Cider


Cider, sometimes called 'hard cider' in America, is a brew made from the juice of apples. I can be made still or sparkling, and generally has a sweet, tart flavor.

I've only just started my first batch of this, using this recipe. It calls for more sugar than some, and since apple juice doesn't come in glass jugs anymore (at my local supermarket anyway), I had to drill the plastic cap and fit it with an airlock. So far it seems to be working just fine.

Update: I've since bottled the cider, aged it, and tried it. The results seem rather sour to me. Not the cardboard-taste you get from bacterial contaimination, but a sour-apple sort of taste. The cider also has quite a bit of alchohol in it. I may try another batch with only the juice, suger, and yeast (leaving out the additional juice concentrate) and see if the flavor is a bit more mild.
